Fricasseed Veal

Ingredients

Directions

Make the sauce base

  1. In a wide stewpan, melt the butter over medium heat until it begins to boil.

  2. Add the veal slices and shake the pan until the veal is firm on both sides, without browning.

  3. Stir in the flour until well mixed with the veal.

  4. Gradually pour in enough boiling veal gravy to almost cover the veal, shaking the pan often.

Stew and finish

  1. Stew gently for 50 to 60 minutes, or longer if the veal is not tender.

  2. Add mushroom buttons 20 minutes before serving to enhance the dish.

  3. Add mace, salt, cream, egg yolks, and lemon juice, following the directions for a blanquette of veal.

  4. If desired, add strips of lemon rind to the gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the tender meat that is gently stewed in the sauce.
Butter
Fat that is melted to firm the veal's surface and carry the flavour of the dish.
Flour
Thickens the cooking liquid into a light gravy that clings to the veal.
Egg yolks
Enrich and thicken the finished sauce with richness and a smooth texture.
Cream
Adds richness and body, softening the sauce's flavour and texture.

The step that matters

Shaking the veal without browning. Browning would add colour and roasted flavour that clashes with the pale, delicate sauce of a fricassée. Sealing the surface only until firm keeps the meat light in colour and keeps the butter and flour from turning brown or bitter.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (veal, butter, flour, cream, egg, mushroom, mace):

  1. Lemonthe original
  2. Coconutfits about as well
  3. Figfits less well
  4. Applefits less well

Fit is the average pairing score against veal, butter, flour, cream, egg, mushroom, mace. Candidates are from the same food group and used in at least 100 recipes.
