What each ingredient does

Poultry
Provides the meat that becomes tender and moist during gentle simmering.
Water
Cooks the bird gently by conduction, keeping the meat moist and pale.
Parsley and butter, béchamel, english white sauce, oyster sauce, celery sauce, or white-mushroom sauce
Adds richness and moisture to the mild, pale flesh of the boiled bird.

The step that matters

Keep the water hot but not boiling. A rolling boil toughens the proteins in the meat and can break the skin, while gentle simmering keeps the flesh tender and moist.

Swap the cauliflower

The recipe marks cauliflower as optional. How well each one fits the dish's main ingredients (chicken, parsley):

  1. Carrotfits better
  2. Potatofits better
  3. Shallotfits better
