Ingredients

Directions

Prepare

  1. Prepare small mushrooms without wetting them and wipe them dry after applying salt.

Cook and drain

  1. Stew the mushrooms in butter until tender, adding more spices than usual.

  2. Drain the mushrooms in a dish raised at one end to remove excess butter.

Pot and store

  1. Once cooled, press the mushrooms into small pots and cover with lukewarm clarified butter.

  2. Store in a cool, dry place. For longer storage, cover with dry paper and melted mutton-suet.

What each ingredient does

Mushrooms
Form the bulk of the dish and, once stewed until tender, give it its soft, savoury texture.
Butter
Cooks the mushrooms gently and carries flavour, adding richness to the finished potted dish.
Clarified butter
Seals the surface of the pots, keeping air out and helping the mushrooms keep.
Melted mutton-suet
Forms an extra airtight layer over the top for longer storage.

The step that matters

Draining the mushrooms. Excess butter left on the mushrooms can turn rancid sooner and makes the potted texture greasy, so draining them well on a sloped dish matters before potting.
