Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs set into a tender custard as they bake.
Veal gravy
Rich liquid that cooks the eggs and gives the custard its savory body.
Clarified butter
Adds fat for richness and a smooth, silky mouthfeel.
Lemon rind
Adds bright aromatic oils that lift the rich flavors.

The step that matters

Pour boiling veal gravy over the eggs gradually. Eggs thicken when heated, so adding hot liquid too quickly or without stirring can scramble them. Pouring slowly while whisking gently warms the eggs evenly, keeping the custard smooth.

Swap the mace

How well each one fits the dish's main ingredients (veal, egg, lemon, pepper, butter):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against veal, egg, lemon, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
