Apple-and-rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the apple pulp

  1. Boil the apples and sugar together until reduced to a smooth pulp, stirring often to prevent burning.

Combine and bake

  1. Mix in the boiled rice and butter while the mixture is still warm.

  2. Add the eggs and mix well.

  3. If the apples are very acidic, increase the sugar and add lemon rind or juice to taste.

  4. Bake at 350°F (175°C) for 30 to 35 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pudding-apples
Break down into a smooth pulp that forms the body and flavor of the pudding.
Sugar
Sweetens the apple pulp and balances its natural acidity.
Boiled rice
Adds body and bulk, giving the pudding a soft, tender texture.
Butter
Adds fat for richness and a smoother, moister texture.
Eggs
Bind the mixture and set during baking to give the pudding structure.

The step that matters

Stirring the apples while they boil. Sugary fruit scorches easily on the pan bottom. Frequent stirring spreads heat evenly and prevents burnt flavor, while the apples reduce to a smooth pulp.
