Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mincemeat
- Provides the main filling flavour and moisture for the fritters.
- Eggs
- Bind the mixture together and help it set as it fries.
- Bread-crumbs
- Absorb moisture and give the mixture body so the fritters hold their shape.
The step that matters
Frying in hot fat. Fat that is hot enough sears the outside quickly so the fritters turn golden and do not soak up grease. Fat that is too cool lets the batter spread and absorb oil, leaving them greasy and pale.
Swap the lemon
How well each one fits the dish's main ingredients (bread, egg, butter):
- Figfits better
- Vanillafits about as well
- Datesfits about as well
