What each ingredient does

Morello cherries
Provide the main fruit, with tartness and juice that combine with the sugar into a syrup.
Powdered sugar
Draws moisture out of the cherries and sweetens them, helping form a syrup while cooking.

The step that matters

Simmering the cherries softly. Gentle heat keeps the fruit whole and its skins intact, while a hard boil can break the cherries apart and make the syrup cloudy or scorched.
