What each ingredient does

Cherries
Provide the fruit pulp that forms the body and flavor of the cheese.
Sugar
Adds sweetness and, as the paste concentrates, helps it hold a firm shape.

The step that matters

Stir until the mixture is dry and does not stick to your finger. Water must evaporate so the sugar and fruit pulp concentrate into a thick paste that sets firmly when cooled. Stopping too early leaves it soft and sticky, while cooking too long over a brisk fire can scorch it, so constant stirring is needed.
