What each ingredient does

Raspberries
Provide the fruit flavor and the body of the jam.
Powdered sugar
Sweetens the jam and, when boiled with the fruit, helps it thicken and set.

The step that matters

Boil the mixture quickly for 10 minutes. Boiling drives off water and concentrates the sugar and fruit solids, so the jam thickens and sets. Stirring and skimming keep it from scorching and remove foam, which keeps the jam clear and smooth.
