  1. Place the strawberries in a large glass jar or wide-necked bottle.

  2. Pour 1½ cups of white wine vinegar over the strawberries.

  3. Cover with thick paper and let sit for 3 to 4 days.

  4. Strain the liquid through a jelly bag or cloth without pressing.

  6. After 3 days, drain the liquid again and strain it through a linen or flannel bag.

Make the syrup

  2. Stir the mixture over low heat until it boils for 5 minutes.

  3. Skim off any foam.

  4. Pour into a clean stone pitcher or large china jugs and cover with a cloth until the next day.

Bottle and store

  1. Bottle in pint or half-pint bottles.

  2. Cork lightly with new velvet corks.

  3. After 4 to 5 days, cork tightly.

What each ingredient does

Strawberries
Provide the fruit flavour and colour that the vinegar draws out during infusion.
White wine vinegar
Extracts strawberry aroma and flavour and provides the sharp acidity that balances the sweetness.
Powdered sugar
Sweetens the infused liquid and, with boiling, thickens it into a syrup and helps preserve it.

The step that matters

Stirring the syrup over low heat. Heating the liquid and sugar gently dissolves the sugar fully before boiling, so it does not scorch or crystallise. Skimming foam keeps the final syrup clear.
