Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carolina rice
Provides the body and starch that thicken the pudding as it simmers.
Milk
Forms the liquid base that the rice softens and thickens in.
Cream
Adds fat for a richer, smoother texture in the frozen pudding.
Sugar
Sweetens the custard and softens the texture of the frozen result.
Egg yolks
Enrich and thicken the custard, helping it set smooth and creamy.

The step that matters

Adding the egg yolks while still boiling. Egg yolks can curdle or scramble if overheated, so they need constant stirring to blend evenly into the hot rice mixture. Stirring for several minutes smooths the rice and keeps the custard uniform, which affects the final frozen texture.
