Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flounders
Break down during simmering to give the stock its body and flavour.
Perch
Adds fish flavour and body as it breaks down into the stock.
Veal broth
Forms the liquid base and gives the stock savoury depth.
Butter and flour
Together they form a roux that thickens the stock.
White wine
Adds acidity and aroma to brighten the finished stock.

The step that matters

Simmer until the fish can pass through a coarse sieve. The fish must break down fully so its flesh and gelatin release into the liquid. Simmering gently rather than boiling keeps the stock clear and prevents cloudiness from emulsified fat and broken particles.
