What each ingredient does

Saltpetre
Helps cure the meat, preserving it and giving it a pink colour and cured flavour.
Common salt
Seasons the meat and helps draw moisture and flavour into it during curing.
Brown sugar
Adds sweetness and helps the surface brown during cooking.
Butter
Adds fat and richness, and helps the surface brown when basted.
Bread crumbs
Forms a crisp, golden crust on the outside of the tongue.

The step that matters

Keep the tongue simmering for 3–4 hours until tender. Gentle simmering breaks down the tough connective tissue slowly. A hard rolling boil toughens the meat and can break the skin.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, pepper, clove, allspice, butter, bread):

  1. Cinnamonfits better
  2. Nutmegfits better

  4. Macethe original

Fit is the average pairing score against beef, sugar, pepper, clove, allspice, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
