Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish meat
Forms the main body of the cake and gives it its savoury flavour.
Egg white
Binds the minced fish and crumbs so the cake holds its shape.
Bread crumbs
Absorb moisture and help bind the cake, and form a crisp coating when fried.
Melted butter
Adds fat for richness and helps the cake brown in the pan.
Onion
Adds aromatic sweetness and flavour to both the gravy and the cake.

The step that matters

Fry the cake until pale brown. The cake is fragile and bound only by egg white and crumbs, so it can break if handled roughly. Frying firms the outside into a coating before it simmers in the gravy, helping it hold together.

Swap the mace

How well each one fits the dish's main ingredients (meat, fish, onion, pepper, bread, parsley, egg):

  1. Thymefits better
  2. Capersfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against meat, fish, onion, pepper, bread, parsley, egg. Candidates are from the same food group and used in at least 100 recipes.
