Ingredients

Directions

Prepare the spice paste

  1. In a mortar, grind the coriander seeds until smooth.

  2. Add the red pepper and onions, and pound together until well mixed.

Fry the base

  1. In a stewpan, melt the butter and slice an onion into it.

  2. Remove the onion when browned, then add the turmeric and fry until the raw flavor disappears.

Cook the curry

  1. Mix the curds with the pounded ingredients and add to the pan with the meat, grated coconut, and salt.

  2. Stir the stew continuously, adding water to prevent burning while the meat browns.

What each ingredient does

Coriander seeds
Provide the main aromatic flavor when ground into the spice paste.
Butter
Carries the fry and adds richness and fat to the stew.
Onions
Add sweetness and body when browned and pounded into the paste.
Curds
Add tang and creaminess, and help soften and thicken the sauce.
Grated coconut
Adds sweetness, body and a rich texture to the stew.

The step that matters

Stir the stew continuously while the meat browns. Sugars and proteins in the onions and meat scorch easily on the bottom of the pan, so constant stirring and a little added water prevent burning and bitter flavors.
