Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Provides the acid that preserves the brine and gives the pickles their sharp flavour.
Brown sugar
Balances the sharpness of the vinegar with sweetness and adds depth of flavour.
White mustard seed
Adds a sharp, pungent bite that carries through the brine.
Horseradish
Contributes a pungent heat that mellows as the pickles sit.

The step that matters

Pound the spices well before adding them to the vinegar mixture.. Finely crushed spices release more of their aromatic oils into the brine, so flavour spreads evenly rather than staying trapped in whole or coarse pieces.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, sugar, mustard, ginger, pepper, turmeric, nutmeg):

  1. Cinnamonfits better
