Frozen Desserts
Ingredients
Directions
Finely pound the ice in a piece of canvas.
Scatter 3 cups of ice around the freezer, then 1 cup of salt, then 3 cups of ice, and repeat, packing down with a hammer handle.
Turn the handle slowly and reverse occasionally for smoother texture.
When the mixture begins to harden, lift the paddles and beat the contents with a long-handled spoon.
Replace the paddles, cover, and continue turning until the handle turns hard.
Remove the paddles, scrape off any adhering portions, and press down the contents.
Cover the plug hole with paper or cork and tilt the tub to drain any liquid.
