Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the chopped veal, rolled crackers, beaten eggs, butter, salt, pepper, and nutmeg. Mix all ingredients well until fully combined.

Shape and bake

  1. Shape the mixture into a loaf and place it in a dripping pan.

  2. Cover the loaf with cracker crumbs and dot with bits of butter.

  3. Add a little water to the pan and baste the loaf often while it cooks.

  4. Bake until fully cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and provides its meaty texture.
Eggs
Bind the chopped meat together and help the loaf hold its shape when sliced.
Rolled crackers
Absorb moisture and soften the texture, keeping the loaf from drying out.
Butter
Adds richness and moisture to the meat as it cooks.

The step that matters

Basting the loaf with water. Veal is lean, so it can dry out in the oven. Adding water to the pan and basting often keeps the surface moist while the loaf cooks through.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, egg, butter, pepper):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
