What each ingredient does

Chicken
Provides the meat that is pressed into a firm, sliceable block.
Cooking liquid (in the method)
Reduced and poured over the meat, it adds moisture and savory flavor that helps bind the chopped meat.

The step that matters

Boil the cooking liquid down until reduced. Using minimal water at the start and then reducing the liquid concentrates its gelatin and flavor. Once it is poured over the chopped meat and chilled, that gelatin helps the mixture hold together when sliced.
