Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Eggs
Bind the batter and help give the pudding its set structure.
Flour
Provides the starch that firms the mixture into a soft, sliceable body.
Baking soda
Releases gas that helps lighten the pudding and let it rise.
Raisins
Add concentrated sweetness and chewy texture throughout the pudding.

The step that matters

Tie the bag with room to swell. The mixture expands as it heats and releases gas from the baking soda. Without space in the cloth, the bag can burst or the pudding can become dense and misshapen.

Swap the currant

How well each one fits the dish's main ingredients (raisin, egg, sugar, nutmeg, milk, flour):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against raisin, egg, sugar, nutmeg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
