What each ingredient does

Chicken
Provides the meat that is chopped, pressed and sliced into the final dish.
Cooking liquid (in the method)
Reduced and poured over the meat to add moisture and concentrated flavor.

The step that matters

Press with a heavy weight for several hours. Pressing while the mixture is still warm and wrapped tightly lets the meat and reduced liquid bind together, so the set slices hold their shape instead of crumbling.
