Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Provides the main body of the dish and browns in butter for savoury flavour.
Cabbage
Becomes tender through slow cooking in butter, giving the dish its bulk and mild sweetness.
Butter
Carries heat and adds richness, helping the meat and cabbage brown and taste rounded.

The step that matters

Browning the cold meat. Cold meat is already cooked, so the goal is to heat it through and brown the surface. Browning relies on the Maillard reaction, which needs a hot pan and enough space; crowding the pan steams the meat and dulls its flavour.

Swap the cabbage

How well each one fits the dish's main ingredients (meat, butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Cabbagethe original

Fit is the average pairing score against meat, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
