Why it works: Pepper and celery match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Stuffed Ham

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Make a stuffing with finely-crumbed bread, seasoned with pepper and celery seed, and heated with a small bit of butter.

  2. Fill the open space in the ham with this stuffing, smoothing over the surface.

  3. Heat in a 300°F (150°C) oven for half an hour.

  4. Cover with grated bread and sprinkle with a little sugar, then brown and serve.
