Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and cooking to thicken the milk into a pudding-like cream.
Milk
Forms the liquid base that the tapioca swells in and thickens.
Egg yolks
Thicken the custard as they cook and add richness to the cream.
Sugar
Sweetens the cream and helps stabilise the beaten yolks.
Egg whites
Whipped into stiff peaks to make a light topping that can brown.

The step that matters

Remove from heat before it curdles. Egg yolks scramble if they get too hot, so the custard can turn grainy. Stop cooking once it thickens and stir well.
