Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the stalks and remove the skins from the mushrooms using a damp cloth.

  2. Place the mushrooms in an oval dish and season with salt, pepper, lemon juice, and chopped parsley.

  3. Cook in a 400°F (200°C) oven for five to six minutes, basting often with hot gravy mixed with melted butter.

  4. Arrange the mushrooms on a serving dish and pour the gravy over them.
