Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Stewed Beep with Mushrooms
Ingredients
Directions
In a porcelain kettle, dredge the meat with flour and season with pepper, salt, mace, cloves, and allspice.
Add enough cold water to cover the meat and stew slowly for three hours, keeping it covered to retain steam.
After three hours, add mushroom ketchup and claret, and let it simmer for an additional 30 minutes.
Serve with plenty of gravy.
