Beef, Boiled

Ingredients

Directions

Prepare the meat

  1. Choose a hitchbone, round, or brisket for boiling.

  2. Skewer or bind the meat into a compact form.

Boil

  1. Place the meat in a pot just large enough to hold it, covering with barely enough water.

  2. If the meat is very salty, start with cold water; otherwise, use warm water.

  3. Gradually heat the water to boiling and skim off any foam.

  4. Add whole onions, thick slices of turnips, and lengthwise pieces of carrots after skimming.

  5. Cook until the meat is tender, using the broth for soup if not too salty.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt beef
Is the main component, becoming tender and flavourful through slow simmering.
Onions
Add sweetness and aroma to the broth as they cook.
Carrots
Add sweetness and body to the broth as they cook.
Turnips
Add mild sweetness and earthy flavour to the broth as they cook.

The step that matters

Start the water temperature correctly for salty meat. Starting very salty meat in cold water lets salt draw out gradually as the water heats, rather than concentrating quickly in the meat's surface. Gradual heating to a gentle boil also keeps the meat tender rather than tough.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, parsley, thyme):

  1. Parsnipfits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, turnip, parsley, thyme. Candidates are from the same food group and used in at least 100 recipes.
