What each ingredient does

Giblets
Provide the main meaty flavor and body of the soup as they simmer.
Neck fat
Adds richness and a rounder mouthfeel to the broth as it renders.
Kitchen bouquet
Adds a dark color and a concentrated savory, browned flavor.
Lemon
Adds acidity that brightens the rich broth.

The step that matters

Cook slowly for 1 hour. Gentle simmering draws flavor and gelatin from the giblets and neck into the water without toughening the meat. A rolling boil makes the broth cloudy and greasy and can leave the giblets tough.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (carrot, celery, lemon, egg):

  2. Leekbetter flavor fit
  3. Spinachbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against carrot, celery, lemon, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
