Stuffed Onions

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove the skins from the onions.

  2. Parboil the onions in boiling salted water for 10 minutes.

  3. Turn the onions upside down to cool and remove part of the centers.

  4. Fill the cavities with equal parts of finely chopped cooked chicken, stale bread crumbs, and the chopped onion.

  5. Season the mixture with salt and pepper, and moisten with cream or melted butter.

  6. Place the stuffed onions in a buttered shallow baking pan.

  7. Sprinkle with additional buttered crumbs and bake at 350°F (175°C) until the onions are soft.
