What each ingredient does

Rice
Forms the body of the loaf and gives it a tender, starchy structure as it cooks.
Egg yolks
Thicken the mixture as they cook gently, helping it set into a sliceable loaf.
Milk
Adds richness and softness, and helps the mixture cook into a smooth custard.
Sugar
Sweetens the loaf and helps keep it moist and tender.
Orange juice
Adds liquid and bright citrus acidity that flavours the loaf.

The step that matters

Cook gently in the double boiler. Egg yolks set at moderate heat and can curdle or turn grainy if overheated. A double boiler keeps the temperature gentle and even, giving a smooth, firm texture.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, sugar, egg, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Orangethe original
