Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that traps air, giving the cake its light, airy structure.
Cream of tartar
Acidifies the egg whites, helping the foam stay stable and hold its volume.
Granulated sugar
Sweetens the cake and, added gradually, helps stabilise the whipped foam.
Flour
Provides the structure that sets the cake once it is baked.

The step that matters

Gradually add the sugar while beating. Adding sugar slowly while beating dissolves it into the foam and strengthens the egg white structure. Dumping it in at once can deflate the foam and leave the cake dense.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, cream, sugar, flour):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, cream, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
