Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meaty flavour that the long simmer draws into the broth.
Flour
Browns on the giblets and thickens the soup as it cooks.
Butter
Fats for frying the vegetables, carrying their flavour into the soup.
Browned flour
Thickens the finished soup and adds a toasted, nutty flavour.

The step that matters

Browning the giblets in flour. Browning caramelises the flour and meat surfaces, building deep flavour; pale giblets give a flat, washed-out broth.

Flavor stand-ins for the turnip

How well each one fits the dish's main ingredients (carrot, onion, butter, chicken, flour, pepper, egg):

  1. Leekbetter flavor fit
  2. Potatobetter flavor fit
  3. Capsicumbetter flavor fit
  4. Turnipthe original

Fit is the average pairing score against carrot, onion, butter, chicken, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
