Cream Oysters on the Half Shell

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cream

  1. In a saucepan, combine hot water, milk, thick cream, and coarse sea salt.

  2. Place the saucepan in a kettle of hot water and heat until it just boils.

  3. Stir in butter and rice flour (or corn starch or arrow root) mixed with a little cold milk.

Assemble and bake

  1. Prepare the washed and buttered oyster shells, placing a large oyster in each shell.

  2. Arrange the shells in a large baking pan, propping them up with pebbles or bits of shell.

  3. Fill each shell with the prepared cream, stirring and beating it well first.

  4. Bake in a hot oven at 400°F (200°C) for 5 to 6 minutes until brown.

  5. Serve in the shell.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice flour
Thickens the cream so it coats the oyster rather than running off.
Thick cream
Adds richness and fat, giving the sauce a smooth, silky body.
Milk
Forms the liquid base of the cream sauce and adds softness.
Butter
Adds fat and flavour, and helps the sauce stay smooth.
Large oysters
Provide the main ingredient, cooking gently in their own shells.

The step that matters

Fill each shell with the prepared cream, stirring and beating it well first.. Stirring keeps the starch and cream evenly distributed so the sauce thickens uniformly rather than settling into lumps or uneven pockets.
