To Render Lard

Ingredients

Directions

  1. Cut the leaf lard into small pieces and place it in a kettle without water.

  2. Season lightly with coarse sea salt as it melts.

  3. Peel slippery elm bark and use it in the same proportion as raw potato to clarify the lard.

  4. Strain the melted lard through a coarse cloth.

  5. For melting, take fat from the smaller intestines, strip the skin from the inside fat, and cut it small.

  6. Place the fat in a crock and set it in boiling water; simmer until it melts.

  7. Strain the melted lard into small jars and cover with the freed skin or washed and dried bladders.
