What each ingredient does

Hard-boiled egg yolks
Their richness and emulsifying fat give the dressing a smooth, creamy body.
Sweet cream
Adds fat and moisture, making the dressing silky and mellow.
Mustard
Adds sharp aroma and helps bind the yolks and cream into a stable mixture.
Vinegar
Adds acidity that brightens the dressing and cuts its richness.

The step that matters

Rubbing the yolks smooth. If the yolks are rubbed unevenly, lumps of yolk stay in the dressing. Working them fully with the cream and mustard breaks them down so the sauce turns smooth and cohesive.
