Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Fresh mushrooms
- Provide the main body and savoury flavour of the ketchup as they release their liquid.
- Coarse sea salt
- Draws moisture out of the mushrooms and preserves the liquid through long standing.
- Whole peppercorns
- Add warm, pungent spice that infuses the mushroom liquid during cooking.
The step that matters
Settling overnight and decanting. Cooling lets fine solids settle to the bottom. Pouring off the clear liquid and leaving the sediment behind keeps the ketchup smooth and stops residue from spoiling it.
Swap the allspice
The recipe marks allspice as optional. How well each one fits the dish's main ingredients (mushroom, mace):
- Nutmegfits better
- Clovefits better
- Thymefits better
- Allspicethe original
