Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Broiled Mushrooms

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut a portion of the stalk off the mushrooms and peel the top.

  2. Wipe the mushroom flaps with a clean cloth and sprinkle with salt.

  3. Place the mushrooms in a wire broiler over a clear fire and turn once.

  4. Transfer to a hot dish and add butter, pepper, salt, and lemon juice.

  5. Place in a 400°F (200°C) oven for a moment, then serve on hot plates immediately.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
