Rhubarb Pie

Why it works: Rhubarb and orange work together. They rank in the top 5% of all ingredient pairs, and cooks put them together in 299 recipes. Both carry 2-methoxy-4-vinylphenol, which smells clove, smoky. The science ↓

Rhubarb Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Peel the rhubarb stalks and cut them into ½ inch pieces.

  2. Pour boiling water over the rhubarb and let it cool.

  3. Once cool, mix in sugar, a little butter, and a sprinkling of flour.

  4. Add the juice and zest of half an orange for flavor.

  5. Fill the pie crust with the mixture and cover with the second crust.

  6. Bake at 350°F (175°C) until golden brown.
