What each ingredient does

Strawberries
Provide the flavor and the juice that becomes the syrup.
Sugar
Sweetens the syrup and, as water evaporates, thickens it and helps it keep.

The step that matters

Boil gently for 10 minutes. As water evaporates, the sugar becomes more concentrated, so the syrup thickens and becomes more stable for storage. Boiling too briefly leaves the syrup thin and less likely to keep, while a hard boil can scorch the sugar.
