Baked Apples

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the tart apples and place them in a pie dish.

  2. Bake in a 350°F (175°C) oven until done.

  3. For baked sweet apples, quarter and core the apples without peeling.

  4. Fill a dish with the quartered apples, rounding them full without adding water.

  5. Place the dish in a kettle of water or steamer and steam until nearly soft.

  6. Transfer to the oven, cover with a plate, and bake until the juice is nearly cooked out.
