What each ingredient does

White currants
Provide the fruit flavor, acidity and pectin that help the jam set.
Sugar
Sweetens the jam and, with the fruit's pectin, helps it thicken and keep.

The step that matters

Stirring almost constantly while the jam cooks. As water evaporates, the sugar and fruit concentrate and thicken, and the mixture can stick to the base of the pan and scorch. Frequent stirring spreads the heat and keeps it from burning.
