Raspberry Vinegar

Ingredients

Directions

Infuse

  1. Place 2 quarts of fresh raspberries in a crock and pour 1 quart of vinegar over them.

  2. Let the mixture stand for 24 hours.

  3. Strain the mixture and pour it over another 2 quarts of fresh raspberries.

  4. After another 24 hours, strain again.

Sweeten and bottle

  1. Add 1 pound of loaf sugar for each pint of vinegar.

  2. Set the vessel in a kettle of water and let it boil briskly for 1 hour. Skim off any scum that rises.

  3. Bottle the vinegar when it is cold.

What each ingredient does

Raspberries
Provide the main fruit flavor and aroma that the vinegar takes up during steeping.
Vinegar
