What each ingredient does

Giblets
Provide the meaty, savoury base of the soup, with browning adding deeper flavour.
Flour
Browns with the giblets and later thickens the soup as it cooks.
Butter
Fats the vegetables and carries flavour as they fry.
Onion
Softens and sweetens during frying, adding aroma to the broth.
Browned flour
Thickens the broth to give it body.

The step that matters

Browning the giblets with flour. Flour that is allowed to brown develops toasty, savoury flavour through the Maillard reaction. Pale or burnt flour changes the soup's colour and taste, so brown it evenly over medium heat.

Flavor stand-ins for the turnip

How well each one fits the dish's main ingredients (carrot, onion, butter, chicken, flour, pepper, egg):

  1. Leekbetter flavor fit
  2. Potatobetter flavor fit
  3. Capsicumbetter flavor fit
  4. Turnipthe original

Fit is the average pairing score against carrot, onion, butter, chicken, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
