What each ingredient does

Poultry
Provides the main meat flavour and body of the soup.
Sweet almonds
Ground to a paste, they give the soup a creamy, lightly thickened body.
Cream
Adds richness and a smooth, silky mouthfeel.
Egg yolks
Thicken the soup gently with heat and add richness to the broth.
White stock
Forms the liquid base that carries all the other flavours.
Mace
Adds a warm, aromatic spice note to the soup.

The step that matters

Adding the yolk and cream mixture. Egg yolks thicken through gentle heat but can curdle and turn grainy if they are added to very hot liquid without being tempered first, or if the soup boils hard afterwards.

Swap the mace

How well each one fits the dish's main ingredients (almond, bread, lemon, cream, egg):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against almond, bread, lemon, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
