Southern Gumbo Fela

Ingredients

Directions

Make the roux base

  1. In a pot, fry the chopped onion in hot lard until light brown.

  2. Dust with the flour and stir constantly to prevent burning until it turns brown.

Cook the gumbo

  1. Pour in enough boiling water to serve the family, allowing for evaporation.

  2. Add the cut-up chicken and boil until tender.

  3. Strain the oyster liquor to remove shell pieces, then boil it briefly and skim.

  4. Add the oyster liquor to the pot and season with salt, black pepper, red pepper, and garlic.

  5. Boil for 15 minutes, then add the oysters and stir in the fela.

  6. Once it boils again, it is ready to serve with boiled rice.

What each ingredient does

Flour
Browns in the hot lard to form a roux that thickens and flavours the gumbo.
Lard
Fat that carries the onion's flavour and helps the flour brown evenly.
Chicken
Releases savoury flavour into the broth as it boils until tender.
Oysters
Add briny, savoury flavour, and cook quickly once added to the hot pot.
Fela
Thickens the gumbo and adds body as it cooks into the broth.

The step that matters

Browning the flour. Stirring constantly keeps the flour from scorching, since burnt flour turns bitter and spoils the whole pot. The colour should go from light to a deep brown slowly.
