Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cream sauce

  1. Combine hot water, milk, thick cream, and salt in a saucepan.

  2. Place the saucepan in a kettle of hot water and heat until it just boils.

  3. Stir in butter and the flour or starch mixed with a little cold milk.

  4. Stir and beat the cream mixture well.

Prepare the oysters

  1. Wash the oyster shells.

  2. Butter the oyster shells.

  3. Place one oyster in each shell.

  4. Arrange the shells in a large baking pan, propping them up with pebbles or bits of shell.

  5. Fill each shell with the prepared cream.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) for 5 to 6 minutes until brown.

  2. Serve in the shell.

What each ingredient does

Oysters
Provide the main seafood flavour and are the body of the dish.
Thick cream
Adds richness and a smooth, silky body to the sauce.
Milk
Thins the cream base and adds a mild dairy sweetness.
Rice flour, corn starch, or arrow root
Thickens the liquid so the cream sets rather than running in the shell.
Butter
Adds fat for a rich mouthfeel and helps the sauce brown lightly in the oven.

The step that matters

Stir and beat the cream mixture well. The starch must be fully dispersed before baking. Unmixed starch forms lumps and leaves pockets of raw, pasty flavour, and uneven thickening.
