Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the bread

  1. Toast the slices of bread and remove the crusts.

  2. Cut the bread into even shapes and spread with butter.

Assemble and bake

  1. Lay the bread in a pan and place one or more oysters on each piece.

  2. Add bits of butter and a pinch of pepper on top of the oysters.

  3. Cover with a tin dish and place in a hot oven at 400°F (200°C).

  4. Cook for 6 to 8 minutes until the edges of the oysters curl.

Serve

  1. Sprinkle lightly with coarse sea salt before serving.

What each ingredient does

Slices of bread
Provide a crisp, buttered base that holds the oysters while they cook.
Butter
Adds richness and moisture, and helps the bread brown in the oven.
Plump oysters
Main ingredient; their briny flavour is the centre of the dish.
Pepper
Adds a mild, sharp aroma that balances the oysters' brininess.

The step that matters

Cover with a tin dish and bake until the edges curl. Oysters overcook quickly and turn rubbery. Watching for the edges to curl, rather than leaving them longer, keeps them tender and juicy.
