Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. In a bowl, combine chopped ham, bread crumbs, pepper, salt, and melted butter.

  2. Moisten the mixture with milk to form a soft paste.

Fill and bake

  1. Half fill patty pans with the mixture.

  2. Carefully break an egg on top of each filled patty pan.

  3. Dust with additional pepper and sprinkle with powdered crackers.

  4. Bake in a 400°F (200°C) oven for about 8 minutes.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set when baked, forming soft cooked centers on top of the ham filling.
Bread crumbs
Absorb the melted butter and milk to form a soft, binding paste.
Ham
Provides savory flavor and substance to the filling.
Butter
Adds richness and fat, carrying flavor and softening the crumb texture.
Milk
Moistens the crumbs so they bind into a spreadable paste.

The step that matters

Carefully break an egg on top of each filled patty pan. The egg white spreads if the yolk breaks or the pan is overfilled, so the egg cooks unevenly. Keeping the yolk intact and the filling only half full lets the egg set neatly on top during baking.
