Prepare the stuffing

  1. Dress the turkey.

  2. Season the inside of the turkey with salt and pepper.

  3. Prepare the stuffing by rubbing the stale bread fine.

What each ingredient does

Turkey
Forms the main body of the dish and is cooked through by roasting.
Stale baker's bread
Forms the base of the stuffing and soaks up the onion and butter flavours.
Butter
Adds richness and moisture, binding the stuffing together.
Fat pork or lard
Adds fat to the outside of the turkey, supporting browning and moisture.

The step that matters

Cover the turkey when it begins to brown. Browning starts early, and a damp cloth slows further colour so the skin does not darken or dry out before the meat is cooked through. Frequent basting then keeps the surface moist.

Swap the onion
