Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Forms the main body of the rolls and gives them a rich, meaty flavour.
Fat salt pork
Melts during cooking, adding fat that keeps the lean liver moist and tender.
Flour
Thickens the cooking liquid into a gravy as it combines with the drippings.
Drippings or butter
Browns the rolls and adds fat that carries flavour into the dish.

The step that matters

Pour boiling water over the liver slices. Brief scalding firms the surface and helps remove the skin cleanly. Liver overcooked during braising turns dry and grainy, so the hour-long cook needs to be kept gentle.
